El Bronco aims for May opening in Cadiz
The restaurant will serve authentic Mexican food
A new sign advertising the El Bronco restaurant in Cadiz went up April 9 with a proposed opening in May.

When Ranch To Table closed a little more than a year ago, Cadiz was left without the longtime diner at 124 S. Main St., a location that had operated continuously under a series of owners. After 15 months of rumors, some residents had begun to wonder whether anything would reopen there soon.
Since then, passersby have seen paper-covered windows and a sign reading “coming soon.” Now, that opening appears to be nearing, with a new restaurant called El Bronco planning to open.
For the past eight months, Rafael Rodriguez has been working to repair a roof leak and complete other improvements. He said recently he is aiming for a May opening.
Rodriguez, who was at the site recently, said the project is coming together. While there were some setbacks, the roof has been repaired and a new sign was being installed on the front of the building. He later explained what drew him to Cadiz.
“Well, we had been looking for possible locations, but when we came here to this beautiful community we were met with some very welcoming and inviting community members. It was a sign that this would be a great opportunity,” Rodriguez said. “The people of Cadiz have been so helpful and warm throughout the process.”
Rodriguez said the restaurant will serve authentic Mexican food. He also said the business is working on a liquor license and plans to offer margaritas.
“The process has, so far, taken eight months,” Rodriguez said. “We’re working on all of the details now and hope to serve the Cadiz community very soon.”
